Swordfish with Vegetables Congo style!

A delicious recipe by one of our friends from DRC

Ingredients for 4 servings

1 kg of salt swordfish

2 aubergines peeled and roughly chopped

2 peppers (red and yellow) roughly chopped

2 spring onions trimmed and roughly chopped

2 cloves of garlic

2 fish stock cubes

Half a glass of water

Olive oil

Directions

– 48 h before put the swordfish in water to remove the salt.

– Put olive oil into a pan and fry the fish. Once fried, reserve the fish for later.

– In the same oil that you have fried the fish fry now the peppers. Add the aubergines and the garlic and mix everything together. Now add the fish stock cubes and the water. Cook it in low fire and finally add the onions.

– Once the vegetables are ready serve them on top of the fish. This dish goes very well with steamed rice on the side!
